Introducing our New Head Chef at the Thomas Restaurant - Dai Nicholls
We are delighted to welcome to the Thomas Restaurant our new Head Chef, Dai Nicholls to manage our kitchen, oversee our new menu and work with our talented team to create wonderful, tasty dishes for our customers & guests to enjoy.
Dai has over 25 years experience in the industry and has worked at hotels across the country. He refers to his style as 'modern European' and says that he enjoys having a good working relationship with local suppliers. Dai commented that 'The highlight of [his] career is moving back home to south Wales and training [his] team'. He went on to say that 'my goal is to showcase the Thomas Restaurant as the place to dine for traditional Welsh dishes that use only the finest of local produce with an emphasis on informal dining and ‘soul food’ dishes that we all remember and turn to when were down'
It is very exciting to have a new input of ideas and Dai certainly shares our passion for producing top dishes, created using fresh, local and seasonal ingredients.
Feedback so far from customers who have enjoyed some of Dai’s creations on the new menu has been exceptional, so do come along and try for yourself.
